Who doesn't love chocolate? It's the first thing you think of when you are buying a last minute gift for someone special.

If you have allergies you have to be careful, but specialty shops now have gluten free chocolate items. You just need to inquire where these specialty sites are. Although there used to be limited places to find the gluten free items, now there are numerous web sites with all kinds of fancy gluten free chocolate for even the hard to please.

You'll need: One package of Bob's Red Mill gluten free chocolate cake mix, 1/2 cup butter, 2/3 cup applesauce, 1/3 cup milk (use rice or soy milk if you are avoiding milk), 1 tablespoon lemon juice, two eggs, 1/3 cup hot water and two tablespoons of vanilla.

Preheat the oven to 350 degrees. Let the ingredients come to room temperature. Grease muffin tins or line with paper liners. Beat butter until it is nice and creamy. Add the cake mix, applesauce, milk, lemon juice and the eggs. Beat at a low speed for around thirty seconds, scraping down the sides when necessary. Increase speed to medium for a few more seconds. Add hot water and the vanilla extract. Mix for one more minute, scraping sides often. Bake at 350 degrees approximately fifteen to twenty minutes. Allow to cool for ten minutes. When they are cool you can frost with your favorite frosting.
